This recipe was designed for the New Year's Eve banquet of the Year of Ox. For the year of the ox, a pipping pot of nourishing oxtail bone broth is a no brainer! At my family gatherings, bone broth is always at the center of the table. It has the ability to create a celebratory, warming vibe for the dining room. With cordyceps, shiitake, goji, jujube dates, and our herbal blend, this bone broth not only looks and tastes amazing, but also brings you health and wellness.Oxtail pays tribute to the oxen, an animal that has for centuries toiled in the fields of China. It symbolizes wealth, prosperity, diligence, and perseverance in Chinese culture. The steaming oxtail broth also creates an imagery of a Chinese phrase "⽜⽓冲天,“ which literally means "the Qi of ox rushing to the heavens." It is a motivating, positive wish one can send to others.

Ingredients

  • 2lb of oxtail*
  • 2 cups of chopped pumpkin
  • 1/2 medium yellow onion
  • 2-3oz fresh mixed mushrooms
  • 2 tbsp goji berries
  • 8 jujube dates
  • 8 small dried shiitake mushrooms
  • 1/2 cup dried cordyceps
  • Herbal blend: Ginseng 10g, Maca 10g, Polygonatum sibiricum 15g, Goji berry 15g, Mulberry 10g, Jujube date 8pc
  • sea salt and black pepper, to taste
Note
  • *If you are vegan, I recommend you use an assortment of firm tofu, fresh mixed mushrooms, 2-3 types of root vegetables, and seaweed.

Instructions

  1. Blanch the oxtail in boiling water for 2-3 minutes.
  2. Rinse all dried ingredients and let them soak for at least 10-15 minutes.
  3. Chop pumpkin, onion, and fresh mushrooms into big chunks.
  4. In a clean pot, add all ingredients except for the tonic bag, salt, and black pepper. Add water to cover.
  5. Bring contents to a boil and then simmer for 3-4 hours. For the last hour of cooking, add the herbs. *Option: put them in a tea bag, so you don't have to strain them out.
  6. Season right before serving with salt and pepper. Discard the herbal bag.
