Morel Mushroom Salad with Za’taar Dressing

This salad fuses different cultures and flavors to make a delicious side. The addition of Za'atar and olives give this dish a Middle Eastern-inspired feel and the mushrooms and sesame oil are Asian-inspired. The combination of flavors, the various textures, and bright colors of this dish make it an irresistible side to any main dish.

Ingredients

  • 2 tablespoons sesame oil
  • 6 dried* or fresh morel mushrooms
  • 6 white asparagus stems
  • salt and pepper, to taste
  • 3/4 tablespoon Za'atar
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 15 leaves of mixed radicchio and butterhead lettuce
  • 7 kalamata olives
Note
  • *soaked 15 minutes or overnight

Instructions

  1. Heat sesame oil in pan. Add morel mushrooms and asparagus. Sauté until asparagus are slightly browned, about 5 minutes. Season with salt and pepper to taste.
  2. In a jar, mix Za'atar, lemon juice, olive oil, salt, and pepper. Shake the jar until dressing is emulsified. Adjust with seasonings if needed.
  3. Massage the radicchio and butterhead lettuce with dressing.
  4. Add olives, morel mushrooms, and asparagus. Toss and enjoy.
