Oyster mushroom is considered netural and yin-nourishing in TCM food therapy. It has a great meaty, juicy texture when roasted in the oven. In this recipe, the mushrooms are coated with a rich sauce made from extra virgin olive oil, soy, and Five Seasons TCM Kidney Nourishing Powder that consists of black soybean, black sesame, and black wood ear mushroom. The end result is a creamy, nutty, fulfilling plate of roasted mushrooms that nourishes kidney yin

Ingredients

  • 1/2 lb oyster mushroom or another meaty mushroom of choice
  • 1 tbsp black sesame powder
  • 1 tbsp black soybean powder
  • 1/4 cup of olive oil
  • 1 tbsp soy sauce
  • 1 tbsp honey or brown sugar (optional)
  • 1 tbsp hemp seeds
  • Pinch of sea salt

Instructions

  1. Preheat oven to 425 F.
  2. Separate the mushrooms and place in a single layer on a baking tray.
  3. In a mixing bowl, mix olive oil, black sesame powder, black soybean powder, soy sauce, 3 tbsp of water, and brown sugar (if using) together.
  4. Coat the mushrooms with the sauce you just made.
  5. Bake for around 20-30 minutes or until done. Stir midway to prevent uneven cooking.
