BRAISED KING TRUMPET MUSHROOMS

King oyster mushrooms' unique texture makes them perfect for searing. The soy sauce and honey in this dish produce the perfect savory and sweet combination. Plating these mushrooms over mashed potatoes allows our taste buds to experience the fusion of the smooth creamy flavor of the potatoes alongside the chewy texture of the mushrooms.

Ingredients

  • 2 medium russet potatoes, peeled
  • 8 cloves garlic, peeled
  • 1/4 cup olive oil
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • black pepper, to taste
  • 5-6 baby king oyster mushrooms
  • 1 tablespoon olive oil
  • 1/4 teaspoon five-spice powder
  • 1 tablespoon soy sauce
  • 1/4 teaspoon honey

Instructions

Mashed Potatoes
  1. Boil potatoes and garlic in enough water until potatoes are softened, about 30 minutes. Drain and reserve 1 cup of the cooking water.
  2. Transfer potatoes and garlic to a blender. Add olive oil, nutritional yeast, rosemary, thyme, salt, and pepper. Blend until smooth. Season to taste.
Baby King Oyster Mushrooms
  1. Cut mushrooms into 1/3-inch slices. Make diagonal slits on each one.
  2. Heat olive oil in pan. Sear mushrooms on both sides for 30 seconds. Add five-spice, soy sauce, and honey. Add a splash of water to help with cooking. Sear each side for 2-3 minutes until browned. Remove from heat. Plate on top of the mashed potatoes!

King trumpet mushrooms (also known as baby king oyster mushrooms) are known for their meaty texture and savory flavor. They are known to improve gut health, boost immunity, lower cholesterol, reduce toxic aflatoxin, and manage diabetes. In recipes, I love to use them as a substitute for scallops (when they are cut into thick disks, they resemble a scallop!). In TCM, king trumpet is thought to strengthen the Spleen and nourish the Heart and Lungs.
